The BOLLE Non-Alcoholic Wine Collection

BOLLE is non-alcoholic wine made the way fine wine is supposed to be made. We start with fully fermented base wines sourced from premium vineyards across France, California, Spain, Italy and Germany. We then gently remove the alcohol using vacuum distillation, working at 30 to 40°C so that the wine's aromatics and structure survive the process intact. Then we restart fermentation by blending fresh grape juice back into the dealcoholized wine.

That second fermentation, the part most non-alcoholic wines skip, is what gives BOLLE its character. Yeast unlock fruity esters and delicate florals. Glycerol adds silkiness. Fine bubbles carry aroma. The result is wine that tastes like wine, not grape juice with bubbles, and not flavoured water with sweeteners poured back in.

Our patent-pending process applies to both the yeast and the winemaking method. It is the only twice-fermented non-alcoholic wine in the world.

Served at 27 Michelin-starred restaurants worldwide, including three-Michelin-starred Atelier Crenn (San Francisco), Benu (San Francisco), and The Fat Duck (Berkshire, UK). Stocked across 160 Total Wine and More stores in California, Texas and Florida. Listed at Berry Bros. and Rudd, the only non-alcoholic wine they have ever stocked.

Choose the Rosé for picnics and aperitifs, the Blanc de Blancs for celebrations and food pairing, or the Still Rosé for everyday glasses without the bubbles.

Frequently Asked Questions

In most jurisdictions, "non-alcoholic" means under 0.5% ABV, about the same level of alcohol you would find in a ripe banana or a glass of kombucha. BOLLE is consistently below 0.5% ABV. If you want true zero, look for "0.0%" specifically. The FDA in the US permits "non-alcoholic" labelling up to 0.5%.
Non-alcoholic wine removes the alcohol but keeps most of the polyphenols and antioxidants found in regular wine, including resveratrol. BOLLE has only 2.8g of sugar per serving (less than half of French Bloom’s 5.9g) and roughly a third of the calories of regular sparkling wine. There are no proven cardiovascular benefits from alcohol itself, so on most health metrics non-alc wine is the cleaner choice if you would otherwise be drinking wine.
We recommend discussing with your doctor. Most health authorities suggest avoiding all alcohol during pregnancy. While non-alcoholic wine has trace amounts well below the threshold of concern, individual guidance applies. Many of our customers do enjoy BOLLE during pregnancy as an alternative to traditional sparkling wine.
Yes. All BOLLE wines are vegan-friendly. We use no animal-derived fining agents in production.
BOLLE starts as fully fermented base wine sourced from premium vineyards across France, California, Spain, Italy and Germany. The alcohol is then carefully removed using vacuum distillation. By placing the wine under reduced pressure, ethanol evaporates at 30 to 40°C instead of 78°C, which means far less thermal stress on the delicate volatile compounds that give wine its aromatics. Then we do the part most non-alcoholic wines skip: we blend fresh grape juice back into the dealcoholized base wine and restart fermentation. Yeast bring structure and lift, fine bubbles carry aroma, glycerol adds silliness, and acidity balances without sweetness. The result is wine that feels and tastes genuinely vinous. Both the yeast and the winemaking process are patent-pending.
BOLLE has 2.8g of residual sugar per serving, less than half the level in French Bloom (5.9g per serving). The exact dosage per varietal is on each product page.
No. Hangovers are caused primarily by alcohol’s dehydrating and inflammatory effects. Without the alcohol, you wake up clear-headed. The compound that causes wine-specific reactions (histamine) is also reduced through dealcoholization.
About 15 calories per 100ml (UK) or 18 calories per 4oz (US), which works out to roughly 30 calories per typical pour. That is around a third of regular sparkling wine. Full nutritional info is on each product page.
Re-cork with a sparkling-wine stopper and store in the fridge. BOLLE keeps its bubble and freshness for 2 to 3 days once opened, longer than most reverse-osmosis non-alcoholic wines because the wine structure is intact.
Rosé: charcuterie, soft cheeses, summer salads, salmon, weddings. Blanc de Blancs: oysters and shellfish, sushi, white fish, festive toasts. Still Rosé: Mediterranean cuisine, grilled vegetables, lighter pasta dishes.
Sommelier note: serve BOLLE Sparkling at 6 to 8°C, Still at 10 to 12°C.
