Non-Alcoholic Sparkling Wine

Non-alcoholic sparkling wine is sparkling wine with the alcohol taken out, to under 0.5% ABV. The good ones start as real wine & keep their bubbles, acidity & body once the alcohol is gone. BOLLE makes 3, each fermented twice so the structure comes back after dealcoholization. The Sparkling RosΓ© scored 93 points from Wine Enthusiast & was named in its Top 40 Sparkling Wines of 2026.

What is non-alcoholic sparkling wine?

It is wine that was fermented in the usual way, then had its alcohol removed, & still has its bubbles. That separates it from sparkling grape juice, which was never fermented, & from sparkling "wine alternatives", which are built from tea, juice or botanicals to taste like wine.

Where do the bubbles come from?

Taking the alcohol out of a sparkling wine also takes out most of its fizz, so the bubbles have to come back somehow. There are 2 ways to do it, & labels do not always say which one was used.

Method How it works What it means in the glass
Added carbonation Carbon dioxide is added to the dealcoholized wine, the way a soda gets its fizz The bubbles are put in from outside, after the wine is finished
Second fermentation The wine is blended with fresh juice & fermented again after the alcohol is removed The bubbles form in the wine itself, along with aroma & body
Sparkling juice Grape juice that was never fermented, then carbonated Not a wine, & usually sweeter

How is BOLLE made?

BOLLE ferments twice. The wine is made as normal, the alcohol is gently removed by vacuum distillation, then the wine is blended with fresh juice & fermented again. That second fermentation rebuilds structure, aroma & mouthfeel, & in the Blanc de Blancs it creates most of the bubbles. Nothing is added afterward to cover the gaps. The process is patent pending.

Every BOLLE wine is under 0.5% ABV & has around 15 calories per 100ml.
